Recipe: a fresh take on Thanksgiving green beans

Skip the green bean casserole and try this Indian-inspired stir fry.

Here’s the second in our series of recipes for the perfect Indian-American Thanksgiving. Skip the green bean casserole and try green bean thoran, an Indian-inspired stir fry popular in South India. 

Ingredients:
250 grams green beans
2 tablespoons coconut oil
1 tablespoon mustard seeds
2 sprigs curry leaves
1/4 cup fresh shredded coconut
Salt to taste
Directions:
  1. Blanch green beans, and cut them in half.
  2. Take a pan and heat coconut oil . Add mustard seeds and curry leaves, once sputtering stops, add beans, salt and coconut .
  3. Stir and enjoy.

    Ha! I made this for a family event 5 years ago. Christi’s family love it. This has become our Thanksgiving tradition since then replacing my SIL’s green beam casserole!
