Recipe: A spicy chicken pesto sandwich perfect for your next backyard barbecue

This spicy chicken pesto sandwich is one of my favorite sandwich recipes. I love anything made with pesto but this spicy pesto recipe adds a nice kick to the sandwich that makes it absolutely delicious. It’s easy to make and looks delectable with its colorful, contrasting layers. And the gluten free baguette I’ve used in this recipe brings it all together with a wonderful rosemary flavor.

It’s an easy sandwich you can prepare ahead of time for a picnic at the park or a backyard barbecue. Bonus: I never have to worry about leftovers from this recipe; it’s usually disappeared by the end of the meal.

Ingredients

2 organic chicken breast pieces
2 cups arugula
1 roma tomato, sliced into thin rounds
1/3 cup organic whole milk yogurt
½ fresh mozzarella log
1 gluten free baguette. (I used this one from Kroger)
Salt and freshly ground black pepper to taste

Basil Pesto:
2 cups of fresh basil
8 garlic cloves
½ cup pine nuts
¼ cup avocado or olive oil
1 tablespoon red pepper flakes (adjust depending on your preferred spice level)

Salt and freshly ground black pepper to taste

Directions:

Cook the chicken breast pieces with some salt and pepper, taking care not to overcook the chicken. Shred the chicken in a food processor.

Make the pesto by combining the basil, garlic, pine nuts, red pepper flakes, freshly ground black pepper and salt in a food processor. Slowly add the avocado or olive oil to the food processor while it’s still running. Let the food processor run until the pesto has a smooth consistency.

Next, combine the chicken, yogurt and pesto in a large bowl. Add salt and pepper to taste.

Slice the baguette horizontally into two halves. Then cut them diagonally into three pieces, to make six open faced sandwiches.

Lightly toast the baguette pieces in the oven or on a stovetop.

Assemble the sandwich by layering the chicken, arugula, tomatoes and mozzarella.
