This recipe for atta biscuits, simple but luxurious wheat flour cookies, is a favorite in my family, and is especially popular with those who don’t eat eggs. I love mine with a cup of tea or coffee.
Ingredients:
  • 2 cups wheat flour
  • 3/4 cup ghee (clarified butter) at room temperature
  • 3/4 cup granulated sugar
  • 1/2 cup whole milk
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt (optional)

Directions:

Preheat convection oven to 350˚F. Keep an ungreased cookie sheet ready; you can use parchment paper.

In a bowl, mix ghee and sugar until the mixture becomes fluffy.

Add milk and continue to mix well.

Pass wheat flour (atta), baking soda and baking powder through a siever or sifter to remove lumps, and mix well with ghee mixture.

Form biscuits in any shape you like and arrange on your ungreased cookie sheet.

Bake for 8 to 10 minutes (your time may vary depending on oven type; I used a countertop convection oven.) Once biscuits turn golden brown; remove and place on a rack to cool.

For an extra special treat, use these biscuits as a base to add more ingredients, such as nuts, chocolate chips. cocoa powder or almond powder. Enjoy with tea or coffee.
