If you’re looking for a quick, healthy snack or meal, these eggplant pizza bites can be made in under 30 minutes. I love making healthy appetizers that are also filling enough to be meals in themselves. The base of these pizza bites is made by slicing eggplant, brushing the slices with olive oil and baking them in the oven. You can then spread some marinara sauce on the eggplant slices, top with your favorite pizza toppings, sprinkle some cheese and bake in the oven until the cheese has melted —that’s it!
2 eggplants, unpeeled, cut into thick round slices
2 cups sautéed chicken
2 cloves garlic minced
½ pint cherry tomatoes
2 tablespoons avocado oil
2 tablespoons marinara sauce
1 teaspoon dried oregano
Shredded parmesan cheese
Salt and pepper, to taste
Preheat oven to 450˚F. Slice the eggplants into round slices, leaving the skin on. The slices should be even and about half an inch in thickness. Lightly grease a large baking sheet and arrange the eggplant slices in a single row. Brush the top of the eggplant slices with some olive oil.
Bake the eggplant slices for 12 to 15 minutes or until the slices are tender and can be easily pierced with a fork.
Remove the eggplant slices from the oven, spread the marinara sauce on the pizza slices. Sprinkle with some salt, pepper and dried oregano.
Add your favorite toppings; I added sautéed chicken, grape tomatoes and shredded parmesan cheese to this recipe.
Using the broil mode in your oven, broil the eggplant slices with the toppings for 3 to 5 minutes or until the cheese has melted.
