Recipe: Navratan korma

Navratan means “nine gems.” This creamy, decadent dish gets its name from the nine different vegetables used in it.

Ingredients:

1 cup frozen cut green beans

1 cup frozen carrots and peas

1 cup frozen cauliflower florets

1 medium potato, boiled, peeled and cut into chunks

¼ cup sautéed, onions

2 teaspoon sautéed, garlic

2 green chilies, diced

½ cup cilantro, chopped

½ block Haldiram’s paneer, cut into small chunks

1 tablespoon oil

½ teaspoon cardamom powder

1 teaspoon dry fenugreek

¼ teaspoon saffron

2 teaspoons salt

1 teaspoon sugar

1 cup heavy whipping cream

¼ cup water

Preparation:

Boil 2 quarts of water. Add the sugar and 1 tsp. salt. Add the frozen vegetables. Boil for 3-4 minutes. Drain and set aside. In a brazier, heat oil and butter. Add cardamom powder, fenugreek. Then add garlic and sauté thirty seconds. Add onions and cilantro. Sauté 1 minute. Add green chilies, vegetables, salt and saffron. Sauté for 3-4 minutes. Add cream. Cover and simmer for 5-6 minutes on low heat. Add potato and paneer. Stir all ingredients. Add water. Cover and simmer for 5-6 minutes. Pour in a serving dish and garnish with cilantro. Tastes the best with Nan.

Serves 6 to 8.
