Oven baked zucchini fries are a healthy alternative to traditional French fries. This zucchini recipe is lightly breaded and baked in an oven. No oil is needed for frying. Since this method preserves the nutritional value of zucchini it makes for a more healthier version of fries than the traditional French fries that are fried in oil and have a lower nutritional value.
Zucchini fries ingredients:
4 large zucchinis
1/4 cup tapioca flour
1 cup panko bread crumbs
1/2 cup freshly grated parmesan
2 tablespoons avocado oil
Freshly ground black pepper
Salt to taste
Spicy Mayo Ingredients:
1/4 cup mayo
1 teaspoon sriracha sauce
Salt to taste
Preheat oven to 425 degrees Fahrenheit. Trim the zucchini edges and cut it into thick matchstick shaped pieces. Lightly beat two eggs in a shallow bowl. Take another bowl and add the tapioca flour. Take yet another bowl to add the panko bread crumbs and parmesan cheese.
Take each zucchini piece and lightly roll it in the tapioca flour, followed by the beaten eggs mixture, and finally the panko bread crumbs and parmesan cheese mixture. Lay the prepped zucchini pieces onto a baking sheet lightly sprayed with oil. Repeat the same process with rest of the zucchini pieces.
Finally, drizzle some avocado oil over the zucchini pieces and season them with some salt and pepper. Top them up with some freshly grated parmesan.
Bake these pieces in the oven until they turn slightly golden brown in color, for about 16 to 18 minutes. In the meantime, prepare the sauce by mixing all the spicy mayo ingredients in a bowl. Once the zucchini fries are ready, remove them from the oven and serve them piping hot with the spicy mayo sauce.
