I’m always looking for ways to get my family to eat more veggies which is why using riced cauliflower in a burger is a great way to sneak in those veggies. It is also one of the main ingredients in the burger. Irrespective of that, the burger tastes just like a regular chicken burger. It’s also a lot more moist and flavorful from the spices added to it. The salad adds a nice crunch and compliments the burger perfectly.
How to make cauliflower rice
As the name implies, cauliflower is one of the main ingredients used to make the burger. “Cauliflower rice” or “pearls” can be made in a food processor. If you are using fresh cauliflower, cut the cauliflower into 1-inch florets and steam them until they get tender. If you are using frozen cauliflower, you may skip this step. Add the florets to a food processor in small batches and pulse the cauliflower until small rice-sized pieces are formed.
You can also buy cauliflower rice from a grocery store which can save you a lot of time.
Makes eight to 10 burgers
Chicken burger ingredients
1/2 riced cauliflower
1/2 package ground chicken
1 finely chopped onion
1/2 cup of feta cheese
1 tablespoon minced garlic
1 tablespoon cayenne pepper powder, adjust to taste
1 tablespoon paprika
Salt to taste
2 tablespoons avocado oil
1 cup panko bread crumbs
8 cups of romaine lettuce, big chops
4 cups arugula
2 tablespoons avocado oil
2 tablespoons lemon juice
1/2 teaspoon ground black pepper
Heat oil in a medium size sauté pan. Add onions to the pan and cook for three to five minutes or until the onions are golden brown and translucent. Next, add garlic and cook for a few more minutes. Now, add the paprika and cayenne pepper powder, and cook for another few more minutes.
Transfer the cooked mixture into a large bowl. Add the rest of the chicken burger ingredients and mix well.
Heat oil in a large cast iron pan on medium heat. In the meantime, beat the eggs and transfer to a flat bowl plate. Add panko bread crumbs to another plate. Take a small section of cauliflower rice and burger mixture and form a patty. Dip the same in the egg mixture and coat the patty generously in the panko bread crumbs. Add the coated burger to the stove top and cook on each side for about six to eight minutes, or until the internal temperature reaches 170 degrees Fahrenheit.
Now prepare the salad by combining the salad dressing ingredients with lettuce and arugula. To serve, add the salad to a plate and top it up with a burger.
